POULET FERMIER FARCI ET SA GARNITURE DE CHANTERELLES

Cuisson : 1h50 mn – four 200° (th 7)
Pour 4 personnes
Ingrédients :
1 poulet fermier de 2 kg
1 CS d’huile d’olive
10 grs de beurre mousserons
Pour la farce :
3 foie de volailles
Un peu de persill effeuillé
1 petit suisse
3 tranches de pain (ou pain de mie) un peu rassi
Sel, poivre noir
50 grs de chanterelles (champignons déshydratés en vente sur notre site) à réhydrater au moins pendant 30 mn.
Pour la farce : sur une planche, haché finement au couteau le persil lavé, le pain et les foie sde volaille. Mélangez avec le petit-suisse, salez, poivrez.
Insérez cette préparation à l’intérieur du poulet. (éventuellement le ficeller)
Disposez le poulet dans un plat à four, l’enduire d’huile et de beurre, salez, poivrez.
Enfournez le poulet (four chaud) ; en cours de cuisson l’arrosez avec le jus rendu.
20 mn avant la fin de la cuisson, dans une poêle verser 3 cuillères à soupe d’huile d’olive, faire dorer à feu vif une échalotte, ajouter les chanterelles réhydratés, laissez dorer 5 minutes, ajoutez quelques cuillères de jus de trempage filtré, faire revenir le tout 5 minutes à feu moyen, ajouter 1 petite gousse ail et le persil hachés (persillade) et cuire à nouveau 10 minutes à feu moyen. Saler et poivrer.
